Given the strong competition for students and their tuition dollars, many colleges and universities use exciting new food service concepts to attract students, faculty, and staff. Great food tends to keep students on campus and increases participation in campus activities. Whether it is a full-service cafeteria, branded food court, or an interesting smaller venue such as an espresso bar, the concept should complement other campus options. The quality of the food in full compliance with health, safety, and sanitation regulations is, of course, nonnegotiable.
